Ruby red full colour. Aromas of forest fruits & pepper when shaken up.
Long & full aftertaste, completely balanced, but still with a huge storage potential.
Grape varieties : a selection of 28 varieties of old vines (planted before 1932), from a plot of 1.32HA, shale subsoil.
Manual picking, traditional pisa-à-pé (crushing & pressing of the grapes by foot trampling) & alcoholic fermentation in small open tanks, malolactic fermentation in inox barrels. Aged up to 15 months in French oak barrels then rested for 6 months in stainless steel barrels. Bottled September 2017. Bottles will rest for 3 years in the cellars of the winery before commercialisation.
Ideal with game dishes & stews.
Can already be enjoyed now, but can be kept for another 15 years.
